Shrove Tuesday or Pancake Day as it’s more commonly known in our house, is one of my family’s favourite occasion!
I usually try to cook a heap of pancakes for my family before we either go to work or school!
Therefore, as a busy, working Mum of two young children, time is of the essence.
I need to have a quick and easy pancake recipe to make for breakfast before everyone sets off on their busy day ahead.
I want to be able to spend some time with my family enjoying our delicious, homemade pancakes.
Therefore, finding a simple but quick and delicious recipe is paramount.
Over the years, I have tried and tested several pancake recipes!
In the end, as a busy Mum, these three recipes, are my go to pancake recipes for either their simplicity or speediness.
I know we are in strange times, as due to Covid-19, time is not so much a factor as we are all either working or learning from home. However, I would like to share my three favourite but simple recipes for you to enjoy.

My most favourite recipe is taken from Jamie Oliver’s cookbook. It’s the Jamie Oliver’s One Cup pancake recipe. It’s so simple and easy.
